Rich Chocolate Truffle Recipe

Ingredients for rich chocolate truffles

300g dark cooking chocolate

90g unsalted butter

½ cup cream

2 tablespoons brandy (optional)

Cocoa powder to coat

To make rich chocolate truffles

  1. Break or chop the chocolate into small pieces
  2. Place chocolate into a medium heat-proof mixing bowl
  3. Combine the butter and the cream in a small saucepan and bring to boil.
  4. Remove from heat
  5. Pour the hot mixture over the chocolate
  6. Using a wooden spoon stir until the chocolate has melted and the mixture is smooth.
  7. Stir in the brandy
  8. Cool the mixture in the refrigerator, stirring occasionally
  9. When the mixture is firm enough to handle remove from the refrigerator.
  10. Roll heaped teaspoons of the mixture into balls, if necessary cool hands in cold water or simply use two teaspoons to form mixture into balls.
  11. Place balls on non-stick paper
  12. Sift the cocoa onto cooking paper or greaseproof paper.
  13. Roll each ball in the cocoa until well coated.
  14. Refrigerate until firm

Store truffles in an airtight container for up to two weeks

Chocolate-Coconut Truffle Recipe

A very simple version of chocolate truffles ideal for children to make with minimum supervision.

Ingredients for chocolate coconut truffles

250g Marie or coffee biscuits

1 tin condensed milk

1-tablespoon cocoa

1-cup coconut

1 tablespoon lemon juice or rum essence

Method for making chocolate coconut truffles

  1. Crush the biscuits finely
  2. Mix all the ingredients together then roll into balls
  3. Roll in the extra coconut.
  4. Put in an airtight container and refrigerate.

Lemon and White Chocolate Truffle Recipe

Sweet, tangy, delicious treats.

Ingredients for lemon and white chocolate truffles.

200g white chocolate

¼ cup cream

30g butter

25g plain sponge cake crumbs

1 teaspoon finely grated lemon rind

50g white chocolate extra

Method for making lemon and white chocolate truffles

Place either; cooking paper, greaseproof paper or foil over a cookie tray

  1. Chop the white chocolate into pieces
  2. Place chocolate in a mixing bowl
  3. Place the cream and butter into a saucepan and heat over a gentle heat until butter has melted.
  4. Pour hot mixture over the chocolate and mix using a wooden spoon until chocolate has melted and mixture is smooth
  5. Stir in the cake crumbs and lemon rind
  6. Cool mixture in the refrigerator for about 30mins. Stir occasionally.
  7. When the mixture is firm enough to handle remove from the fridge.
  8. Roll heaped teaspoons of the mixture into balls
  9. Grate the extra white chocolate onto a plate or piece of greaseproof paper
  10. Roll each truffle in the chocolate until coated and then place on prepared tray.
  11. Refrigerate truffles for 30mins or until firm

Can be stored in an airtight container for up to 2 weeks.
